Summer Veggie Salad + My Worst Date Ever

Summer Veggie Salad

When it comes to summer salads, I’m all about fresh, bright, and unfussy. This one is packed with sweet seasonal veggies, creamy mozzarella, and loads of herbs — and it’s tossed with my all-time favorite dressing that ties everything together like a dream.

But first… let’s talk about the worst date I’ve ever had.

A Little Dating Humility…

Flashback to over a decade ago: I was freshly divorced, still finding my footing, when a very cute guy asked me out for a drink. We were having a great time — the conversation was flowing, we were laughing… and then, toward the end of the night, he invited another girl to meet him there.

Yep. He ignored me, started chatting her up, and then straight-up left with her.

I wish I were kidding.

It was humbling. But honestly? It built character. It reminded me that I deserve way more — and looking back now, I definitely dodged a bullet. My life ended up way better than it ever could have with that guy. Sometimes the red flags show up in neon, and you just have to thank the universe for the reroute.

Anyway — let’s get back to the good stuff.

Summer Veggie Salad

Ingredients:

  • 1 cup sliced cherry tomatoes
  • 1 cup cooked sweet corn (fresh or frozen, but make it sweet!)
  • 1/3 cup diced red onion
  • 3/4 cup diced fresh mozzarella
  • 3/4 cup blanched asparagus, chopped into bite-size pieces
  • Handful of fresh basil, chopped
  • Handful of fresh mint, chopped
  • Optional: flaky sea salt + black pepper to taste

Toss it all together in a bowl, and now let’s dress it up.

My Favorite Homemade Dressing

This is the dressing I use on everything in summer — it’s zippy, creamy, and herb-forward without being overpowering.

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • Big pinch of salt + pepper
  • Optional: a little lemon zest or squeeze of lemon juice for brightness

Whisk it all together or shake in a jar. Pour over the salad right before serving.

Whether it’s a salad or a date, the ingredients matter. Choose things — and people — that nourish you, that feel good, that leave you better than you were before. And never forget: if someone shows you who they are… believe them. 😉
