No-Bake Healthy Pecan Pie Bars

I am OBSESSED with pecan pie… but it’s loaded with fat and sugar. So I came up with these no-bake healthy pecan pie bars! They taste like classic pecan pie, but the whole recipe is made with clean, real, simple ingredients: pecans, almond flour, maple syrup, coconut oil, and the yummiest homemade date caramel.
No baking, no corn syrup, no dairy. Just a rich, nutty crust, a gooey caramel center, and a crunchy pecan topping with a sprinkle of flaky sea salt.
These bars live in the freezer, which means they’re the easiest make-ahead holiday dessert ever. Perfect for Thanksgiving, Christmas, or whenever you need a healthier sweet treat that still feels special.
Why You’ll Love These No-Bake Healthy Pecan Pie Bars
- No bake and easy to make
- Naturally sweetened (maple syrup + dates)
- Dairy free and gluten free
- The perfect freezer dessert
- Tastes like real pecan pie but lighter and cleaner
- Great for Thanksgiving, Christmas, or holiday parties (or all year round, really.)
Ingredients
For the Crust
- 1 cup pecans
- 1 cup almond flour
- 2 tablespoons coconut oil
- 2 tablespoons maple syrup
- Pinch of salt
For the Date Caramel
- 2 cups pitted Medjool dates
- enough boiling water to cover dates
- 1 5 oz can coconut cream (I love Native Forest)
- 1 teaspoon vanilla extract
- Pinch of salt
For the Topping
- 1 cup pecan halves
- Flaky sea salt
Instructions
1. Make the Crust
- Add pecans, almond flour, coconut oil, maple syrup, and a pinch of salt to a food processor.
- Blend until the mixture is smooth and sticky, almost like a thick dough.
- Line a 9×13 (or similar) baking dish with parchment paper.
- Press the crust mixture firmly and evenly into the pan.
- Place in the freezer for 1 hour to firm up.
2. Make the Date Caramel
- Add dates to a blender and cover with boiling water for at least 10 min. Then drain water.
- Add to blender (along with dates) coconut cream, vanilla, and salt.
- Blend until smooth and creamy. Add a splash more water or coconut cream if needed to loosen.
- The caramel should be thick, glossy, and spreadable.
3. Assemble the Bars
- Spread a generous layer of date caramel over the chilled crust.
- Top with pecan halves, gently pressing them into the caramel.
- Sprinkle flaky sea salt on top.
- Freeze for at least 2 to 3 hours, or until completely firm.
4. Serve
- Slice into bars while cold.
- Store in the freezer for up to 3 months or in the fridge for 1 to 2 weeks.
Tips
- For cleaner slices, run a knife under hot water before cutting.
- Add cinnamon to the crust for a warm holiday flavor.
- Drizzle melted dark chocolate on top if you want a little extra.
