Viral Homemade Gyro

This viral homemade gyro recipe is everywhere for a reason. It delivers those classic gyro flavors without a rotisserie, using an easy oven-baked method that’s perfect for weeknights.

I put my own healthy spin on it by pairing the spiced beef with a high-protein kefir tzatziki, made with whole-milk Lifeway Foods kefir and farmer cheese for extra creaminess, gut-friendly probiotics, and a serious protein boost. The result is a lighter, more nourishing take on a comfort-food favorite that still delivers on flavor. Wrapped in soft lavash and piled high with fresh veggies, this gyro-style recipe is satisfying, protein-packed, and proof that viral recipes really can be both delicious and good for you.

Ingredients:

Gyro Meat

  • 1 pound 85% lean ground beef
  • ½ large onion, grated
  • 1–2 garlic cloves, minced
  • 1/4 cup whole-milk Lifeway Foods kefir

Spices (all ½ teaspoon each):

  • Cumin
  • Coriander
  • Paprika
  • Dried oregano
  • Cinnamon
  • Salt
  • Black pepper

2 pieces of Lavash Bread, heated or toasted.

Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, add all ingredients to a bowl and mix well (with your hands).
  3. Divide the mixture into two equal portions.
  4. Place one portion in the center of an approx 12×16-inch sheet of parchment paper. Top with another sheet of parchment. Use a rolling pin to flatten into a thin rectangle about the same size as parchment.
  5. Roll each parchment up to make two logs.
  6. Place the logs on a baking sheet. Scatter the red onion and tomato wedges around them.
  7. Bake for 25-30 min
  8. Unwrap the logs and let cool a bit. Rip or cut the meat into smaller pieces and spread back onto the baking sheet.
  9. Broil for a couple min until a bit crispy.
  10. Serve in warm lavash with lettuce, tomatoes, pickles, onions, hot peppers, or any veggies of your choice and kefir tzatziki. (recipe below)
