Easy Summer Fig Toast That Feels Like Sicily

If you’ve ever dreamed of a sun-soaked afternoon in Sicily, this easy summer fig toast will instantly transport you there (or at least make your kitchen smell and feel like it!).

Sweet ripe figs, juicy peaches, creamy farmer cheese or ricotta, toasted sourdough, fresh basil, pistachios, a kiss of honey and balsamic… it’s summer on a plate.

And yes, I’ll say it: Sicilian figs are the best on earth. They’re huge, deeply sweet, and basically ruin you for figs anywhere else. Figs in the US just don’t quite compare, but we make do with what we have.

I’m so excited to finally go back to the motherland this month to enjoy some of the best figs (and everything else amazing) that Sicily has to offer. Until then, this toast is my love letter to those flavors.

Ingredients

  • 2 slices good sourdough bread, toasted
  • 4 tbsp Lifeway Farmer Cheese (or ricotta)
  • 3 fresh, ripe figs, quartered
  • 1 fresh ripe peach, sliced or diced
  • Fresh basil leaves, torn
  • Drizzle of balsamic glaze
  • Drizzle of honey
  • 1/4 cup chopped pistachios
  • Flaky sea salt

Directions

1️⃣ Toast your sourdough until it’s golden and crunchy.
2️⃣ Spread a generous layer of farmer cheese or ricotta over each slice.
3️⃣ Top with fruit: Arrange the figs and peach artfully on the cheese.
4️⃣ Drizzle with balsamic glaze and a bit of honey.
5️⃣ Sprinkle with chopped pistachios for that amazing crunch.
6️⃣ Finish with torn fresh basil and flaky sea salt.
7️⃣ Slice each toast into thirds for easy, shareable bites (or just devour it whole—I won’t judge).

Tips & Variations

  • Cheese swap: Mascarpone or whipped goat cheese would be delicious.
  • Fruit twist: Try nectarines, blackberries, or even roasted grapes.
  • Nut options: Almonds or walnuts work great if you’re out of pistachios.
  • Balsamic upgrade: A true aged balsamic from Modena (or better yet, Sicily) will make this next-level.

Why This Tastes Like Sicily

Actual figs in Sicily

Figs in Sicily are legendary. They’re massive, drippingly sweet, and honestly hard to beat. When you’re there, they’re everywhere in summer: markets, gardens, restaurant menus.

In the US, we don’t always get that level of fig magic, but even average figs can shine in this easy, fresh preparation. It’s all about celebrating what’s good and making it feel special.

And I can’t wait to go back this month and get the real deal: the best figs on earth, the best produce, and everything else that makes the island so magical.

Serving Ideas

  • Perfect summer lunch or light dinner with a glass of chilled white wine.
  • Great as an appetizer on a big grazing board.
  • Ideal for brunch with friends, just make a big batch and let everyone help themselves.

Final Thoughts

This easy summer fig toast is my little slice of Sicily at home. It’s simple, fresh, and full of flavor. It’s comfort food, Italian style, made for slow afternoons, good conversation, and appreciating what you have (even if it’s not quite those giant Sicilian figs).
